Sesame Noodles with Chicken and Snow Peas

Ingredients

  • 1 lb. thin spaghetti, regular or GFCF, cooked & drained
  • 3 boneless chicken breasts, cubed
  • 1 cup snow peas
  • 1/4 cup soy sauce
  • 2 Tablespoon sugar
  • 4  tea. cloves garlic, minced
  • 2 Tablespoons rice vinegar
  • 3 Tablespoons sesame oil
  • ½ teaspoon hot chili oil or chili garlic sauce
  • 4 Tablespoons olive oil
  • 2 whole green onions, sliced thin 

Cooking Instructions

  1. Start the noodles in a pot of boiling water. Cook until al dente.
  2. While the noodles are cooking in a small bowl whisk together; soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil and olive oil together and set aside.
  3. While the noodles are cooking, sauté the snow peas cook for 5-7 minutes. Take out of pan and add to a serving dish.
  4. Toss the chicken in the pan with a bit of stir fry sauce and cook until chicken is done. Set aside.
  5. Drain the noodles and add to the serving dish with the snow peas. Pour sauce over warm noodles and snow peas and toss to coat.
  6. Sprinkle with green onions and toss again.
  7. Chicken can be added to bowls individually, so that vegetarians can eat this dish.
