Pork Chops with Spiced Pears

Makes 4 servings
Ingredients
1 tsp. olive oil
2 ripe pears peeled and chopped
3/4 tsp. cinnamon
1/8 tsp. nutmeg
1/2 tsp. vanilla extract
3/4 tsp. salt
1/2 tsp. paprika
1/4 tsp. fresh ground pepper
2 lb. boneless center-cut pork chops 1/2 inch thick
1 gallon freezer bag
1 quart freezer bag
Preparation Instructions
Peel, de-seed, and chop the pears.
Heat 1 teaspoon of the oil in a small saucepan over medium heat.
Add the prepared pears, 1/2 teaspoon of the cinnamon, and the nutmeg.
Cook, stir and mash the pears continuously until the "sauce" is thick and the pears are tender. This will take about 7-9 minutes.
Remove the pan from the heat and stir in the vanilla. Allow it to cool while you prepare the pork chops.
In a separate bowl, combine the remaining cinnamon, salt, paprika, and pepper.
Rub the spice mixture over the pork.
Place the pork in a large resealable freezer-safe bag or a silicone reusable freezer bag. Seal.
Place the spiced pear topping in a medium-sized freezer bag and seal.
Staple the medium bag to the one containing the pork chops. Be sure to staple above the seal to avoid leaks.
