Breakfast Sandwiches

Ingredients

  • 12 English muffins or bagels, regular or gfcf

  • 12 sausage patties or bacon slices

  • 12 eggs

  • 2 Tbsp. water

  • 12 cheese slices, regular or gfcf

  • salt and pepper to taste

  • plastic wrap

  • 2 gallon freezer bags

Preparation Instructions

  1. Fry the breakfast sausage patties in a skillet until cooked through. Set aside.

  2. OR, Preheat the oven to 350 degrees. Place a piece of parchment paper across the bottom of a rimmed baking sheet and press down into the corners. Remove the wrapping from the sausage. Cut into or shape into 2 oz patties (should make 8) and lay the patties onto the parchment lined baking sheet evenly spaced. Once the oven is preheated, place the baking sheet onto the middle rack of the oven and close the door. Bake for 10 minutes on one side and then flip using a spatula. Bake for another 3-6 minutes.

  3. OR, if you are using bacon, Heat oven to 400º F. Line two rimmed baking sheets with foil. Arrange 1 lb bacon in a single layer on the pans and bake until crisp, 16 to 20 minutes.

  4. Preheat the oven to 325° and grease a 9x13 baking dish or a rimmed baking sheet with nonstick cooking spray.

  5. Whisk together the eggs, water, salt, and pepper until well combined. Pour the mixture into the baking dish and bake for 24 minutes or until set.

  6. Cut the eggs into 12 squares.

  7. Layer a sausage patty, egg square, and one slice of cheese between two Bagels or English muffin slices. Leave out the meat for the vegetarian ones. Wrap each sandwich in plastic wrap and place them in a resealable freezer bag.

  8. Store the sandwiches in the freezer.
