Dragon Noodles

Vegetarian Dragon Noodles (without shrimp)

Ingredients

  • 1 lb frozen peeled & deveined shrimp
  • 1 1b. lo mein noodles or fettuccini noodles
  • 4 large eggs
  • 4 Tbsp sriracha 
  • 4 Tbsp soy sauce 
  • 4 Tbsp brown sugar 
  • 2 lime 
  • 8 Tbsp butter 
  • 4 cloves garlic 
  • 4 green onions 
  • Handful fresh cilantro 
  • 2 green onion, sliced
  • 1/2 tsp. red pepper flakes

Cooking Instructions

  1. Place the shrimp in a colander and rinse with cool water until thawed. Let the shrimp drain until ready to use.
  2. In a small bowl stir together the sriracha, soy sauce, brown sugar, and about 1 Tbsp juice from the lime. Set the sauce aside.
  3. Cut the limes, the green onions and the cilantro leaves and put them in individual bowls for serving later.
  4. Bring a pot of water to a boil for the noodles. Once boiling, add the noodles and boil until tender. Drain the noodles in a colander.
  5. While waiting for the water to boil, mince two cloves of garlic. Add half the butter and garlic to a large skillet and sauté over medium heat until the garlic is soft (about one minute). Add the shrimp and continue to sauté until the shrimp turn pink and opaque (about 3-5 minutes). Remove the skillet from the heat, and set aside for serving.
  6. In another pan, crack two eggs into a bowl then whisk lightly. Heat the rest of butter in a skillet over medium heat, then add the eggs and crushed pepper and lightly scramble the eggs. Avoid over cooking the eggs.
  7. Once the noodles have drained, add them to the skillet with the eggs, then drizzle the prepared sauce over top. Toss the noodles and eggs to coat in the sauce.
  8. Serve Dragon Noodles with the optional toppings of the shrimp, sliced green onion, fresh cilantro leaves, and a squeeze of lime.
